Paula Rincón graduated as a microbiologist from CSU, Los Angeles. With an approach based on scientific evidence, Paula is an important voice of the LowCarb movement in Spanish, promoting healing through conscious eating. Paula coined the term ‘Tribugénico’ that she uses to describe the lifestyle that she practices and encourages; a ketogenic diet rich in ancestral foods and with a fair dose of fermented foods.
Along with her partner Dr. Mauricio Arango, Paula is the co-founder of Nutrimedicina Low Carb, providing users with educational tools and directing the work of an integrative, interdisciplinary team of health professionals and chefs for the easy application of what they teach. She has presented her research work at Stanford Medical School and at conferences such as Experimental Biology, and at Low Carb USA.
